Pork tenderloin bacon curry

INGREDIENTS for 4 servings
  • 1 kg pork tenderloin
  • salt, pepper
  • 3 tablespoons mustard (e.g. tarragon mustard)
  • 20 slices of bacon
  • 1 bunch of flat-leaf parsley
  • 350 g crème fraîche
  • 50 g whipped cream
  • 4 tsp curry powder
  • 30 g tomato paste
  • 1/2TL sugar
  • some oil for the Casserole dish

PREPARATION Pork tenderloin bacon curry

Important for the preparation of the pork tenderloin bacon curry is a preheated oven. Therefore, you set yourself in the direction of this in motion and take the necessary steps, do not know your super duper heating cuboid – otherwise I could give more precise information to preheat it from to 200 ° C convection (top/bottom heat ~220 ° C). You will see, that makes the cooking process much easier 😉

Parry (remove any fat and tendons) the pork tenderloin and cut it into fillets. Ideally, you should calculate the size of the cut so that everyone has 5 mebaillons on the plate later. For me it worked out with 2 – 3 centimeter cuts.

Now season each piece of meat with salt and pepper (really consider buying a pepper mill  ), spread it thinly with the mustard (I usually choose tarragon mustard here, because the spicy, slightly sour note, of it fits very well) and wrap it with a piece of bacon. Now place the bacon praline in the baking dish with the cut side of the wrapping facing down.

Now you can start with the topping. Finely chop the parsley, put it in a medium bowl and save a little for later decoration. Add the cream, the crème fraîche, the curry powder (I like to use this curry ) and the tomato paste. Stir everything to a smooth cream and season with salt, pepper and sugar to your taste.

Pour this spice cream evenly over the prepared bacon candies. Then put them in the preheated oven, now you realize how advantageous my introduction was ;-), and cook for 20 – 25 minutes.

Before serving, sprinkle with the remaining chopped parsley.
